      <image:title>Recipes - CHOCOLATE-COVERED BANANAS - Ingredients 3 ripe bananas 2/3 cup dark chocolate chips (my fav is Hu Gems) 1 tbsp. coconut oil 6 popsicle sticks</image:title>
      <image:caption>Topping suggestions: your favorite nuts, chopped shredded coconut  Directions Peel and slice bananas in half. Line a baking sheet with parchment paper. Insert the popsicle sticks about 1/2 of the way, reaching the center of the bananas. Place in freezer for about 4 hours (or overnight).  After bananas are frozen and ready, prepare the chocolate for dipping. In a small sauce pan, melt chocolate and coconut oil. Use a gentle heat, stirring often until smooth. Many directions suggest the double boiler method, I happen to have a heavy duty sauce pan meant for this specifically. Chocolate can burn easily, so keep that in mind when preparing it.  Now it’s time to dip the bananas. Remove them from the freezer and start to dip them in the chocolate, one at a time. They will set up quickly, so roll the dipped banana in toppings immediately and place back on parchment paper.  Place the covered bananas back in the freezer and allow time for them to freeze (about an hour). Place the bananas in an airtight container and return to the freezer. Frozen bananas can be stored for up to 3 months. Enjoy!</image:caption>

      <image:title>Recipes - ZUCCHINI ICE CREAM - Ingredients 1/2 cup nut milk (I use coconut milk) 2 cups frozen zucchini (sliced in small cubes) 2 cups frozen banana slices (can drop to 1 cup depending on preference) 1 tbsp. chia seed (optional, but adds omega 3’s and fiber) 2 tbsp. maple syrup (can add more, especially if using less banana) Directions First add nut milk into blender (can add more later if needed.) Add the rest of ingredients into the blender, and blend until well-incorporated. This will come out very thick, so I suggest using a spatula to move mixture around to help the blender out.       <image:title>Recipes - MANGO FRUIT LEATHER - Ingredients 3 ripe mangos (peeled and sliced) 1 tbsp. maple syrup Juice from 1/2 lemon Directions Add ingredients into blender. Blend until smooth. Pour mix into saucepan. Heat and stir often. Once bubbles begin to break, remove from heat and place on baking sheet lined with parchment paper. Use scraper to spread the mix evenly throughout the parchment paper, forming a rectangle. Make sure the rectangle is thin, but not too thin that you can see the parchment paper.  Dehydrate in oven at 170°F for approximately 4-6 hours. Fruit leather is done when it is no longer wet, and barely sticky. Once done, cut fruit leather (parchment paper included) into vertical rectangles. The paper will help protect them until they are ready to eat.  Store in a container or ziplock bag, and refrigerate until ready to eat.  Roll them up and enjoy!</image:title>

Blend until smooth.  Line baking sheet with parchment paper. Set aside. Add blended mix into saucepan.  Stir continuously until it starts to bubble. Once it starts boiling, turn off stove. Pour mix into baking sheet.  Use scraper to spread the mix evenly throughout the parchment paper, forming a rectangle. Make sure the rectangle is thin, but not too thin that you can see the parchment paper.  Bake at 170°F for approximately 3 to 3.5 hours (time varies depending on oven.) Once done, cut fruit leather (parchment paper included) into vertical rectangles. The paper will help protect them until they are ready to eat.  Store in a container or ziplock bag, and refrigerate until ready to eat.  Roll them up and enjoy!</image:title>
