Ezekiel Flour Waffles
These waffles are amazing and a complete protein offering a wide variety of vitamins and minerals. Ezekiel waffles are also high in fiber and also offer healthy carbs and fats. The Ezekiel mix comes from Ezekiel 4:9-10 - this flour kept Ezekiel's mind sharp and sustained him for 390 days. Now that is nutrient dense!
Ingredients:
3 cups fresh milled Ezekiel flour [Click here for the flour recipe]
1 tsp salt
1 tsp baking soda
2 1/2 tsp baking powder
1/3 cup olive oil (recommended: Palmetto Olive Oil, Cobrancosa)
4 eggs
3 cups buttermilk
2 tsp sucanat (optional)
Instructions:
Combine Dry Ingredients: In a large mixing bowl, whisk together the Ezekiel flour, salt, baking soda, and baking powder.
Add Wet Ingredients: In a separate bowl, beat the eggs and then add the buttermilk and olive oil. Mix until well combined.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined. Avoid over-mixing.
Soak: Let the batter sit for 15-30 minutes. This allows the flour to fully absorb the liquids, resulting in fluffier pancakes.
Cook Waffles: Preheat waffle maker and if not non-stick, lightly oil. Pour batter into each section and let your waffle maker get to work.
Serving Suggestions:
